I recently sat down with my friend Quentin from Wandering Warriors to talk about why this story matters, not just to veterans and their families, but to all Australians.

For many years, I’ve proudly supported our special forces veterans through the annual Pollie Pedal charity ride, a cause that means a great deal to me.

We must back our war fighters and veterans not just in moments of service, but long after they return home.

Wandering Warriors has helped raise awareness and funds for Bravery and Betrayal—a powerful documentary that shines a light on the experiences, sacrifices, and challenges faced by those who have served our country.

These are difficult conversations, but they are necessary ones.

I encourage all Australians to take the time to watch Bravery and Betrayal on Channel 7 this evening at 9pm AEST.

I want to share a story my family has carried through generations, in honour of Athol Hudson.

His courage and sacrifice live on in us. Like so many families, we carry these stories so they’re never forgotten.

A bit of a different post from me but I wanted to share my favourite Anzac biscuit recipe with you all ahead of Anzac Day tomorrow. Recipe below for you to screenshot and follow 👇

Ingredients 🧈 
* 1 cup rolled oats
* ¾ cup brown sugar
* 1 cup plain flour
* ¾ cup desiccated coconut (or shredded coconut if you like a bit of extra texture like me)
* 125 g butter, melted
* 2 tablespoons golden syrup
* ½ teaspoon bicarbonate of soda
* 2 tablespoons boiling water

Method 🥄
1. Preheat oven to 160°C. Line a baking tray with baking paper or grease it well.
2. In a large bowl, combine rolled oats, brown sugar, plain flour, and coconut. Mix thoroughly.
3. In a separate bowl, mix the melted butter and golden syrup.
4. Stir the bicarbonate of soda into the boiling water, then add this mixture to the butter and golden syrup. Mix well.
5. Pour the wet ingredients into the dry ingredients and stir until fully combined.
6. Using a teaspoon, roll the mixture into balls, then place them on the tray, and gently flatten.
7. Bake for about 15 minutes, or until golden brown.
8. Let them cool on the tray for a few minutes before transferring to a rack.
9. Enjoy!
